Natty Chili...

I am SO not a football person. But I DO love any excuse to make food and eat it and start drinking (ahem, bloody marys) early in the day.

SO...for superbowl sunday, i made an amazing "Natty Vegan Chili" and took it to the Side Bar (where i work).
Here's the recipe...then I'll tell you the secret ingredient.

i used this recipe...

I subbed half of the chili powder for chipotle powder, added an extra small can of tomatoes AND added one Natural Light Beer. NO, i'm not joking. It was all that was around. But I swear it made the chili delicious. What up, Natty Light???

I also made a really great vegan jalapeno cornbread. Everyone at the bar was stoked on it, even the meatiest of meat eaters. My friend even put some on his hamburger, apparently.

fire wok (or soup) with me...

The idea for this cabbage, zucchini, carrot, dumpling soup was stolen from Brian and Ryan, who had made something similar a couple days before. In Austin, we are fortunate enough to have a GIANT asian grocery store way up north. It's truly amazing, and has a gazillion fake meats, sauces, snacks, etc...

WELL, the last time i went there i picked up some veggie broth (sans MSG, which is something you HAVE to watch for in this store). This became the base for this super quick soup. Sauteed up the rest of the veggies in my crisper, dumped them into the broth along with a few frozen vegetable dumplings (courtesy of the same store). A little on the cheating side, but took no time at all, used up some stuff and was delish as hell!

No crazy outlaw gangster meetings, but in Ithaca, it was proven you can still get some Tomatillos when it is 4 degrees outside. Tomatillo tortilla soup, made with black beans, garlic, onions, crushed tomatoes, tons of spices, as well as some chipotles, and some collard greens for added niceness.
It was a real nice alternative to the master Cleanse Stew is hustlin right now. I hope he reads this and cracks....

for the love of.

ghetto creamy veg

Today for lunch i made a cheatin' ass ghetto creamy veg soup. I say I cheated because i used one of those cartons of organic potato leek soup (which, mind you, has neither enough flavor nor salt to stand alone!). Then i added some fake chicken stock. i sauteed garlic, onion, carrots, celery, some broccoli and some cabbage and added those. Threw in a bay leaf or two, some italian type seasonings, nutritional yeast, SALT and pepper. Then pureed half of it to bring the creaminess back up. It was surprisingly delicious!
